Heat oven to 350.
Peel or scrub potatoes, as many as you want. Slice.
Peel and slice onions - plenty of 'em.
cut up any leftover ham, after trimming fat & gristle from it.
Layer potatoes, onions, and ham in baking dish.
Make a white sauce, seasoned with salt & pepper, pour over the potatoes and everything, lifting with fork to let sauce flow though.
Bake until bubbly and potatoes are tender.
Good with crusty bread, green beans or salad.
Basic White Sauce
(a tblsp. is a tablespoon, or 3 teaspoons [tsp])
2 tblsp. butter
2 tblsp. flour
1 cup milk
salt and pepper
melt butter and stir in the flour. Let cook, stirring, a few minutes. Add the milk, using a whisk to keep it lump free. Cook and stir until it bubbles and thickens, about 5 - 10 minutes. this allows the flour to cook.
Can be doubled or tripled, depending on how much you want.
Can add beef or chicken boullion, or cheese - this is also a good basis for making gravy.
