Scalloped Tuna and Potatoes - Stuff we didn't learn in cooking school

Yesterday afternoon I had some folks from school in for some pool time and dinner and we decided to ignore all the frozen goodies my mother left in the freezer before they went on vacation and just use up the stuff we found in the fridge and in the pantry and here's what we ended up with:

3 tablespoons of butter
3 tablespoons of minced onion
1/2 teaspoon of salt
A little pepper
3 tablespoons of flour
2 cups of milk
1 6 1/2 ounce tin of tuna drained and flaked
(note, waterpacked is best here)
3 large potatoes thinley sliced

Saute the onion in the butter until tender. Stir in the salt, pepper and flour. Whip in the milk to make a sauce. Continue cooking, stirring constantly until thickened. Add tuna and heat through. Layer potatoes in a square baking dish and pour the tuna mixture over the potatoes. Bake covered at 350F. for 1 hour. Uncover and bake 30 minutes longer until potatoes are tender.
This is really good and I'm pretty sure my mother wouldn't approve of it. And I'm certain she wouldn't approve of what we ate for breakfast this morning:

Creamed eggs and ham

2 tablespoons of butter
2 teaspoons of minced onion
3 tablespoons of flour
1 teaspoon of salt
a little pepper
1/8 teaspoon of dry mustard
1 cup of milk
3 hard boiled eggs sliced
1 cup cooked and cubed ham

Melt the butter in a frying pan and cook the onion until golden. Stir in the flour, salt, pepper and mustard to make a thick paste. Whip in the milk and cook stirring constantly until thickened. Stir in eggs and ham and heat through. Serve over rice, noodles or toast. This is great with tomato juice and pots of coffee for the hangovers. Then race outside and jump in the pool and the cold water will get your attention. Wouldn't want to do this every morning but it felt really good this morning.
 
Sounds like you guys are having a fun time. Me to, just trying to stay cool.
Question on the tuna dish. I do something similar with pork chops. I have a hard time getting the potatoes to cook through. Have you had that trouble. Yeah, I know cook it longer, but then it is over cooked. I may try and par boil the potatoes first. Any thoughts? CF:)
 
Hi CF. The hour and a half that we baked that casserole seemed to work well and my friends said they like their potatoes al dente. Have you considered using tinned potatoes? They have them sliced and they really aren't bad. We've used them to do home fries. Works pretty well. Yeah, we're having a ball so far but I seldom ever had to clean the litter boxes for the cats when my folks were home so this could get dicey. Guess we'll see.

Never bought canned potatoes, we did used to can them many years ago. Heck, we canned everything, including meat and fish. I really don't care for hard potatoes. I may boil mine slightly first. Hey, don't go overboard with the adult beverages. Do I sound like your Mom? CF:)
 
Yes, you do! I do believe my mother was counting on some of you guys to keep me on the straight and narrow while she's away. She forgets that I'm past the age of reason, I think. But I promise to be cool with the adult beverages. But I'm 29 for crying out loud! How adult do you haveta be?
At least I'm not busy creating grandkids like my brothers are (they're married, so it's okay) and making a granny out of Mum.
 
Ian, you doing good. When I was 18 I knew everything. (still do) But willing to learn. I can't even remember when I was 18. What am I thinking. CF:)
