Sweet Potato Pone
2 lbs. sweet potato, peeled & grated
1/2 lb. pumpkin, peeled & grated
1 c. coconut, peeled & grated
1/2 c. raisins
2 c. milk
3 eggs
1 c. flour
1/2 teaspoon black pepper
2 t. salt
1 t. cinnamon
1 T. vanilla
1 t. baking powder
2 T. lime juice
1/2 rind of lime, grated
3 T. butter,melted
shortening for greasing pan
Beat eggs, add vanilla, cinnamon, salt and milk. Mix grated sweet potato, pumpkin, coconut and floured raisins. Add melted butter, egg mixture and sifted flour to bind mixture. Pour into well-greased 4-in. deep baking pan. Cook approximately 1 1/2 hours in 350 degree oven. Test for doneness by inserting toothpick until it comes out clean. Bakes golden brown color. Cool before serving. (Best when served at room temperature.)
