Texas-Style Hash
1 lb. ground beef
2 c. sliced onions
½ c. chopped green bell pepper
½ c. uncooked rice
2 t. chili powder
½ t. salt
1 can (16 oz.) whole tomatoes
In heavy skillet, brown ground beef with onions and green pepper. Cook, stirring often until all of the vegetables are tender; drain the fat.
Add rice, chili powder, salt and tomatoes; blend thoroughly. Bring to a boil, then reduce heat. Cover and simmer for 25 minutes or until the rice is tender. Stir twice while simmering.
