Tomato Jam
1 28 oz. can crushed Italian plum tomatoes
1/2 cup sugar
1/2 cup water
1/2 cup onions, minced
1 tsp. cinnamon
1 tbsp. basil, sliced
1 tbsp. oregano, chopped
6 tbsp. lemon juice, or the juice from 2 lemons
2 tsp. lemon zest, or the zest from 2 lemons
salt and pepper to taste
In a medium pot over medium-low heat, combine all ingredients.
Bring to a boil, then simmer, stirring constantly, for 30 minutes,
or until the tomatoes have a jam-like consistency.
Bake the prepared cheese dishes for 5 minutes, or place under
the broiler for 2 minutes until golden brown and bubbling.
Drizzle the tops with hot chili oil and serve with bread and
Tomato Jam.
