RE: "Real bakers take a cake that intricate in peices and assemble it on site. They don't go walking over hill and dale with them. "
Know what? I absolutely LOVE Martha Stewart... but in her books and mags I often see pics of 2-4 folks all teaming together to carry a fully-constructed, heavy, cumbersom, 3-4 tier wedding cake quite a fair distance....
And as someone who makes cakes I often think to myself: "Martha- you're too damned smart to do something SO goofy!"
Over many years in the wedding cake/catering biz, if ya haven't learned all on your own that it's best/easiest/fastest to haul it to the serving table, on-site, in seperate pieces, then assemble and do the final icing work... rather than totally complete/construct back in the kitchen, well... what can I say? Lord! It's like renting a U-Haul to move from an old house to a new one with your beds all still made, your dressers still full of clothes, and supper still on all your plates!
