Recipe: Alentejo Garlic Soup

- 1 large clove garlic
- about 1/4 tsp Mediterranean Sea Salt
- 1 tbsp olive oil
- 1 tbsp fresh coriander, finely chopped
- 1/2 cup boiling water*
- 1 poached egg
- 1 or 2 slices firm white bread, brushed with olive oil, toasted, and cut in triangles
In bottom of soup plate, mash together garlic and salt to a paste; stir in olive oil and coriander. Pour in boiling water. Slip in poached egg. Garnish with toast triangles, and serve immediately. Makes 1 serving. (*May be replaced with 1/2 cup chicken broth.)
