Recipe: American Smoked Beef Brisket

- 6 tbsp liquid smoke
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp celery salt
- 6 to 8 lbs well trimmed beef brisket
- Salt
- Ground Black Pepper
- 1 tsp Worcestershire Sauce
- Prepared Barbeque Sauce
- Mix liquid smoke, garlic powder, onion powder, and celery salt. Spread on all sides of brisket.
- Wrap brisket in heavy foil and refrigerate 12-24 hours.
- Preheat oven to 250°
- Remove roast from refrigerator, open foil and sprinkle both sides with salt, pepper, and 1 tsp worcestershire sauce.
- Seal tightly, place package in roasting pan and bake at 250° for 5 hours.
- Uncover and pour barbecue sauce over the meat and bake another hour.
- Remove from ove, and allow to stand at room temperature with foil still sealed for about 30 minutes before slicing.
Yield: About three servings per pound
