Recipe: Apricot Nut Bread

- 2 2/3 cups sifted flour
- 3/4 cup sugar
- 3 tsps baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1/4 cup melted butter or margarine
- 1 cup buttermilk
- 1 1/2 cups dried apricots, cut into thin strips
- 1 cup chopped nuts (optional)
- Preheat oven to 350 degrees
- Sift dry ingredients, saving 2 tbsps flour to coat fruit and nuts.
- Beat eggs well then add melted butter and buttermilk.
- Add this mixture to dry ingredients and stir only until moistened.
- Coat apricots and nuts with flour and fold into batter.
- Pour batter into 9 x 5 x 3 inch pan.
- Bake for about 1 hr.
- Cool on wire rack.
May be frozen 2-3 months.
Servings: 1 Loaf
