Recipe: Asparagus Mold

- Two cans of all green asparagus or two packages frozen aspargus cooked according to package directions
- 1 cup hot liquid from asparagus
- 1 tbsp gelatin, dissolved in 1/2 cup cold water
- 1/2 cup mayonnaise
- 1/2 cup cream, whipped
- 1 tsp sea salt
- 2 tbsp lemon juice
- 1 cup slivered almonds
- Heat the 1 cup hot liquid from the can of asparagus or use water.
- Pour over the dissolved gelatin. Chill until partially set.
- Fold in mayonnaise, whipped cream, salt, and lemon juice.
- Cut asparagus into small pieces, then add asparagus, and almonds.
- Pour into a prepared gelatin mold and congeal.
Serve on a plate lined with lettuce along with mayonnaise whipped with a little lemon juice.
