Ingredients in Baked Potato Soup
- 4 large baking potatoes
- 2/3 cup butter or margarine
- 2/3 cup all purpose flour
- 6 cups milk
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 4 green onion, chopped and divided
- 1 cup Hormel Real Crumbled Bacon
- 1 1/4 cups shredded Sharp cheddar cheese, divided
- 8 ounce carton sour cream
To Make Baked Potato Soup
- Preheat oven to 400° F.
- Wash and prick potatoes with fork.
- Bake potatoes for 1 hour or until done.
- Let potatoes cool.
- Cut potatoes in half lengthwise and scoop out pulp.
- Melt butter or margarine in heavy saucepan over low heat.
- Add flour; stir until smooth.
- Cook 1 minute stirring constantly.
- Gradually add milk, cook over medium heat, stirring constantly until thick and bubbly.
- Add potato pulp, salt, pepper, 2 tablespoons green onion, 1/2 cup bacon and 1 cup cheese to heated mixture.
- Cook until thoroughly heated.
- Stir in sour cream.
- Add extra milk for desired thickness.
- Serve with remaining onion, bacon, and cheese for garnish.
