1/2 cup shortening
1 cup sugar
2 eggs
1 cup mashed banana
1 tsp lemon juice
2 cups unbleached* Pillsbury or King Arthur All Purpose flour
3 tsp baking powder
1/2 tsp salt
1 cup chopped nuts
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, cream together the shortening and sugar.
3. Add eggs, and mix in.
4. Mash bananas with lemon juice and then add to the shortening & sugar mix.
5. Sift flour, baking powder, and salt. Add flour mixture to sugar, banana, & shortening. Mix well.
6. Add nuts last and stir well.
7. Pour mix into 2 greased bread pans.
8. Place in over and bake 35-40 minutes** until top is golden, and bread begins to pull away from pan.
* Unbleached flour in naturally whitened by aging. Bleached flour is chemically treated, and can impart a chemical taste to foods. King Arthur and Pillsbury All Purpose flours are our favorite flours for general purpose use.
