1 9 inch baked pie crust
1/2 cup sugar
1/2 cup unbleached all-purpose flour
dash salt
1 2/3 cup milk
3 egg yolks
1 tsp vanilla
1 cup heavy cream
3 tbsp confectioners sugar
3 ripe bananas
1. In medium saucepan combine sugar, flour and salt.
2. Add milk and cook over medium heat, stirring constantly with a whisk, until thick and smooth; about 15 minutes.
3. In small bowl with an electric mixer beat egg yolks.
4. Add about 1/4 cup of custard mixture to eggs and mix well.
5. Return all at once to hot mixture, stirring constantly. Stir in vanilla.
6. Cover with wax paper or plastic wrap and set aside to cool.
7. Whip cream until soft peaks form.
8. Add confectioners' sugar and continue beating until stiff.
9. Fold half the whipped cream into the cooled custard.
10. Slice bananas and arrange in bottom of pie shell.
11. Layer bananas and custard. Cover with custard mixture.
12. Place remaining cream in pastry bag and with star tip decorate pie edge.
