Recipe: Banana Cream Pie II

Quantity 

• 1 9" prepared pie crust
• 1/3 cup flour
• 2 eggs
• 1 tsp pure vanilla extract
• 3/4 cup granulated sugar
• 1/8 tsp salt
• 2 cups scalded milk
• 3 bananas, sliced

1. Combine the sugar, flour, and salt in a 1 quart saucepan
2. Add eggs and blend together.
3. Gradually stir in the scalded milk.
4. Cook this mixture while stirring constantly over medium heat for 15 minutes or until thickened.
5. Cool, then add the vanilla extract.
6. Spread a thin layer of this pudding over bottom of the pie shell.
7. Add the sliced bananas, distributing them evenly, and then pour remaining pudding over top of the banana slices.
8. Allow to cool.

Serve with whipped cream if desired.
