Recipe: Beef Tenderloin Deluxe

- 3 lb beef tenderloin
- 1/4 cup chopped green onion
- 2 tbsp soy sauce
- Dash ground white pepper
- 2 tbsp butter
- 2 tbsp butter
- 1 tsp Dijon mustard
- 3/4 cup sherry
- Light Grill.
- Spread 2 tbsp butter on readied beef.
- Place in shallow roasting pan and put on grill over indirect heat. Cover.
- Cook green onion in butter till tender.
- Add soy sauce, mustard, and pepper.
- Stir in wine, heat just to boil.
- Pour over beef and baste frequently.
- Grill 45 min. for rare.
- Let stand 20 minutes before slicing in 1/2-3/4 inch pieces.
- Pass remaining sauce with meat.
Allow 3-4 servings per pound.
