3 tbsp butter
4 tbsp light brown sugar
1 1/2 tbsp flour
1/2 tsp sea salt
2/3 cup fresh orange juice
1 tsp grated fresh orange peel
2 tbsp lemon juice
1 can diced or cut beets, drained
Melt the butter in a heavy saucepan, add the brown sugar and salt which has been blended with the flour. Stir in the orange juice, grated peel and lemon juice and cook slowly until thickened, stirring constantly. Add the drained beets, and simmer for a few minutes. The flavor develops if these are kept warm [160° F] for a while before serving. Serves 4.
