Black Bean Dip Ingredients
- 1/2 cup dried black beans
- 1 tbsp light olive oil (or vegetable)
- 1 small onion, finely chopped
- 1/2 tsp chopped garlic
- 1 stalk celery, finely chopped
- 1/4 tsp dried marjoram
- 1/4 tsp ground cumin
- 1 tbsp lemon juice or to taste
- Dash of sea salt
- Splash Tabasco pepper sauce
- 1 tbsp light mayonnaise
- Chopped parsley
- Chopped green onion
To make Black Bean Dip
- Soak beans overnight.
- Rinse beans well then cook about 2 hours until very soft.
- Drain, reserving very little of the cooking water.
- In a skillet with the canola oil, saute onion, garlic, celery, marjoram, and cumin until the vegetables are lightly browned.
- Add lemon juice and just enough bean water to cook vegetables thoroughly.
- When vegetables are well done, combine with the beans and add sea salt and Tabasco pepper sauce and cook 5 minutes more.
- Mash bean mixture, but do not puree.
- Stir in mayonnaise and add more lemon juice and Tabasco sauce to taste.
- Refrigerate Black Bean Dip or serve immediately at room temperature.
Before serving sprinkle top of Black Bean Dip with parsley and green onions. Black Bean Dip is good with pita bread, corn chips or rye crisp.
