Recipe: Bonanza Bread

  1. Preheat oven to 325 degrees
  2. Grease two loaf pans.
  3. Combine flours, salt, baking soda, baking powder, dry milk , wheat germ, sugar, nuts and raisins in a large mixing bowl.
  4. Blend thoroughly with pastry blender or fork.
  5. Whirl eggs in electric blender until foamy.
  6. Add oil, molasses, orange juice and bananas; whirling after each addition.
  7. Add apricots; whirl just to chop coarsley.
  8. Pour mixture into mixing bowl with dry ingredients.
  9. Stir just until flour is moistened.
  10. Pour into two 7 3/8 x 3 5/8 x 2 1/4 inch greased loaf pans.
  11. Bake for 1 hr or until center is firm when lightly pressed with finger tip.
  12. Cool slightly in pan on wire rack then remove from pan.
  13. Wrap tightly and store overnight to mellow for flavor.
