Ingredients in Butternut Squash Soup
- 1 large butternut squash, peeled, seeded and diced
- 2 cups chicken stock
- 1 cup diced potatoes
- 1 medium onion, diced
- 1/2 teaspoon prepared fresh chopped garlic
- 2/3 cup cream
- 1 teaspoon dried dill weed
- 1 teaspoon cumin
- salt and pepper to taste
To Make Butternut Squash Soup
- In a large soup pan simmer for 15 minutes squash, chicken stock, potatoes, onion, and garlic.
- Puree mixture in blender (in batches if necessary) until smooth.
- Return pureed mixture to soup pot.
- Add cream, dill weed, cumin, salt and pepper to mixture; mix well.
- Heat and Serve Soup.
