1 cup sugar
3/4 cup canola oil
2 eggs
1-1/2 cups flour
1/4 tsp sea salt
1 tsp ground cinnamon
1 tsp baking powder
1 tsp soda
1/4 cup chopped nuts
1 cup grated carrots
Mix together sugar and oil. Add eggs, one at a time, beating well after each addition. Add sifted dry ingredients. Add nuts. Add grated carrots and mix well. Bake in two 8" layers or one 9" tube pan in 350° F oven for 30 minutes (for layers) and 55-60 minutes (for tube pan). Serves 8 to 10.
