Recipe: Carrot Fruitcake

- 2 2/3 cups white sugar
- 2 2/3 cups water
- 2 tsp ground cloves
- 2 tsp ground cinnamon
- 2 tsp ground allspice
- 2 tsp sea salt
- 2 tbsp canola oil
- 1 pkg seedless raisins
- 5 to 8 finely grated carrots
- 4 cups flour
- 2 tsp baking soda
- 1 cup chopped walnuts
- 1 (1 lb) pkg mixed candied fruit
- Mix and boil sugar, water, spices, salt, oil, raisins, and carrots.
- Boil 8 minutes. Cool boiled mix.
- Mix flour, baking soda, walnuts and fruit in a bowl.
- Add boiled mix to dry ingredients and mix.
- Line pans with aluminum foil and bake at 350° F for 1 hour.
Makes 5 to 6 one-pound cakes or 3 two-pound cakes.
