1 1/2 cups unbleached all-purpose flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2/3 cup canola oil
2 eggs
1 cup finely shredded carrot
1/2 cup crushed pineapple
1 tsp. vanilla
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, combine dry ingredients together.
3. Add canola oil, eggs, pineapple, carrots, and vanilla. Mix well.
4. Pour batter into a greased and floured 9x9x2 inch baking pan.
5. Bake about 35 minutes.
6. Frost with cream cheese pecan frosting.
