1 bunch fresh spinach or 1 package frozen chopped spinach
4 tbsp butter, melted
1 cup shredded Cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 cup heavy whipping cream
3 eggs, beaten
1/8 tsp garlic powder
1/8 tsp white pepper
1 ready made baked pie crust
Preheat oven to 375° F.
If using fresh spinack, cook until leaves begin to wilt, then chop. For frozen spinach, cook according to package instructions.
Squeeze out excess water from spinach.
Combine cooked spinach with butter, Cheddar and Monterey Jack cheeses.
Line bottom of the cooked pie crust with the spinach mixture.
Combine the eggs, whipping cream, pepper, and garlic; Mix well. Pour over top of spinach mix.
Place pie pan on top of a cookie sheet, and place in oven. Bake for 40 minutes or until done. Test for doneness with a knife - knife will come out clean when inserted and removed from the custard.
