Recipe: Cheesecake

- 4 tbsps soft butter
- 1 1/4 cups graham cracker crumbs
- 1/4 cup sugar
Press into 9 1/2 inch buttered spring form pan.
- 1 lb cottage cheese
- 1 lb cream cheese
- 1 1/2 cups sugar
- 4 eggs, slightly beaten
- 3 tbsps flour
- 3 tbsps cornstarch
- 1 1/2 tbsps lemon juice
- 1 tsp pure vanilla extract
- 1/4 lb butter, melted
- 16oz sour cream
- nutmeg or fruit (optional)
- Preheat oven to 350 degrees.
- Blend the two cheeses until creamy.
- Add sugar and eggs; mix well.
- Add flour, cornstarch, lemon juice and vanilla; mix at low speed.
- Blend in melted butter and sour cream.
- Pour over graham cracker crust.
- Bake 1 hour 10 minutes.
- Turn off heat and leave in over for 2 hours.
- Cool overnight in refrigerator.
- Sprinkle with nutmeg or top with fruit, if desired.
