2 (8-oz) pkgs cream cheese
3/4 cup sugar
2 eggs
1 tsp vanilla extract
16 vanilla wafers
Cherry pie filling (optional)
16 paper cupcake molds
Preheat oven to 375° F. Let cream cheese softer at room temperature about one hour. Add sugar to softened cream cheese. Mix in eggs until a smooth texture is achieved. Stir in vanilla. Put one vanille wafer in each cupcake mold. Pour in mixture 1/4 inch high in cupcake mold. Bake 15 minutes at 375°. Top with cherry pie filling if desired.
