- 8 skinless, boneless chicken breasts
- Seasoned coating mix, such as Shake ‘n Bake
- Salt and pepper
- Dash garlic powder
- 6 to 7 tbsp sweet butter
- 1 cup fresh sliced mushrooms
- 2 large cloves garlic, finely diced
- 1/2 large green pepper, diced
- 1/2 large red pepper, diced
- 1/4 cup cooking sherry
- Cut chicken into 1" cubes.
- Add salt and pepper to taste and garlic powder to the seasoned coating mix.
- Dredge cut chicken through mix.
- Melt butter in skillet; add garlic and saute until golden brown.
- Add chicken pieces and cook, stirring occasionally until they are golden in color.
- Add peppers and mushrooms.
- Sprinkle sherry over the chicken mixture.
- Cook another 10 minutes or until peppers and mushrooms are cooked.
- Place mixture in a baking dish, cover and refrigerate overnight.
- Bake at 350° F. for 30 to 40 minutes.
Serves 4 to 6.
