Chicken in Champagne Ingredients
- 2 pound chicken cut up
- 1/8 tsp white pepper
- 2 tbsp butter or canola oil
- 1/4 tsp garlic powder
- 1/2 pound fresh mushrooms, cleaned and sliced
- 1 bottle any champagne
- 1 tbsp cornstarch dissolved in 1 tbsp water
- 1 tsp parsley flakes
To make Chicken in Champagne
- Brown chicken in butter or canola oil. Reduce heat.
- Add white pepper, garlic powder and 1 cup champagne.
- Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Add 1 more cup campagne and simmer, covered, for another 15 minutes.
- Add mushrooms, and 1 cup champagne, cover, simmer 15 minutes.
- Add 1/4 cup champagne, and simmer, covered, for another 15 minutes. Add more champagne if needed.
- Remove chicken to a warmed serving platter.
- Boil champagne in pan over high heat until reduced to about 1 cup (or add additional champagne until about 1 cup is in pan).
- Add the cornstarch/water mix, and stir over medium heat until thickened.
- Pour sauce over the chicken, and sprinkle with parsley.
