Chicken Santi Andaluza Ingredients
- 2 boneless, skinless chiken breasts
- 2 tbsp sliced almonds
- 2 tbsp butter
- 1 tbsp parsley flakes
- 1/8 tsp garlic powder
- 1/4 cup all-purpose flour
- 2 tbsp raisins
- 1/3 cup pitted Spanish Olives
- 1/4 cup orange juice
- 1/3 cup dry sherry
To make Chicken Santi Andaluza
- Combine the parsely flakes, garlic powder, and orange juice in a zippered storage bag.
- Place chicken into the bag, close, place in refrigerator, and allow to marinate for 2-3 hours.
- Remove chicken from marinade, coat with the flour, and place into an non-stick skillet with 2 tbsp canola oil.
- Cook to brown chicken on both sides.
- Remove excess oil. Allow pan to cool a little, then add butter and wine. Heat until glazed.
- Add raisins, almonds, and olives. Cover and simmer for 10-15 minutes or until chicken is done. Don't allow pan to dry out, so add additional water if needed.
