Chicken Scallopine with Zucchini Ingredients
- 1/2 cup flour
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 6 boneless chicken breasts
- 1/2 cup butter or margarine
- 1/2 cup walnuts or pine nuts
- 3 zucchini, sliced
- 1/2 tsp oregano
- 1/2 tsp basil
- 2 cups light cream
- 1/4 cup grated Parmesan cheese
To make Chicken Scallopine with Zucchini
- Mix all but 2 tbsps flour, salt and pepper in bowl.
- Pound chicken breasts to flatten them.
- Dip chicken breasts in mixture and press firmly to coat; shake off excess and chill.
- In large skillet, heat butter until it sizzles.
- Saute chicken breasts 5 mins on each side; remove and keep warm.
- Add nuts to pan and saute lightly; remove.
- Add zucchini slices and saute 3 to 4 mins.
- Toss nuts and zucchini together and arrange on platter, topping with chicken breats.
- Make sauce by stirring reserved 2 tbsps flour, oregano and basil into pan drippings.
- Stir in cream and grated cheese.
- Season to taste with salt and pepper.
- Simmer, stirring until thick and bubbly, about 5 mins.
- Pour sauce over chicken breasts; sprinkle with chopped parsley.
- Serve with extra sauce.
