Recipe: Chocolate Cake

- 2 cups flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2 cups sugar
- 4 ounces unsweetened chocolate
- 6 tbsp unsalted butter
- 1 tsp vanilla
- 2 eggs, slightly beaten
- Preheat oven to 350° F. Butter and flour three 8x1 1/2" round cake pans. Line bottoms with waxed paper.
- Sift together flour, salt, soda, and baking powder. Set aside.
- In medium saucepan bring to boil over high heat 2 cups sugar and 2 cups water. Stir until sugar dissolves.
- Add chocolate and butter. Let cool, stirring occasionally. Stir in vanilla.
- Beat eggs into chocolate mixture until combined.
- Add dry ingredients all at once and beat until smooth.
- Divide batter evenly between pans and bake about 25 minutes.
- Let stand 10 minutes and invert onto racks to cool completely.
- Frost cake with Chocolate Frosting (below).
Chocolate Frosting Recipe
- 1 1/2 cup heavy cream
- 1 1/2 cup sugar
- 6 ounce unsweetened chocolate
- 1 stick plus 2 tbsp unsalted butter
- 1 1/2 tsp vanilla
- Pinch of salt
- In saucepan bring cream and sugar to boil; reduce heat and simmer for 6 minutes at simmer.
- Pour into medium bowl over chocolate, butter, vanilla and salt.
- Stir occasionally until melted.
- Set in large bowl of ice water. Using hand held mixer beat on medium scraping sides occasionally with rubber spatula until thick and glossy, about 5 minutes. Use at once.
