1 cup sugar
5 tbsps flour
3 eggs, separated
2 cups milk, divided into 1/2 cup and 1 1/2 cups
1 1/2 oz baking chocolate
1 tsp pure vanilla extract
1/2 tsp salt
6 tbsps sugar
1 9 inch baked pie shell
Preheat oven to 350 degrees
1. Mix sugar, flour and salt.
2. Add 1/2 cup milk.
3. Scald the remaining 1 1/2 cups milk.
4. Add egg yolks to sugar mixture; beat well.
5. Stir in scalded milk and chocolate.
6. Cook in a double boiler over hot water until thick and well blended. If lumpy beat well for a few mins.
7. Add vanilla.
8. Pour mixture into a baked pie shell.
9. Make meringue by beating egg whites, gradually adding 6 tbsps sugar; beat until stiff.
10. Top pie with meringue and bake until browned; approximately 30 mins.
