Clam Cakes Recipe
- 51 ounce can Sea Watch Chopped Clams, drained
- 2 tbsp butter
- 2 tbsp onions, minced
- 2 eggs
- 1/2 cup cream
- 1/2 cup breadcrumbs, softened
- 1/2 cup celery, finely minced
- 1/2 tsp dry mustard
- 2 tbsp parsley, chopped
- 1/2 tsp salt
- 1/2 tsp paprika
- Flour or breadcrumbs
- Melt butter in a non-stick skillet.
- Stir in onions and simmer 3 minutes.
- Combine with eggs, cream, soft breadcrumbs, clams, celery, dry mustard, chopped parsley, salt, and paprika.
- Chill mixture for 2 hours.
- Shape into cakes.
- Lightly dust with flour or breadcrumbs.
- Melt 1 tbsp butter in skillet.
- Quickly brown the cakes on both sides.
- Lower the heat and cook the clam cakes slowly for about 6 more minutes.
Makes about 12 3 ounce clam cakes.
