1 1/4 cups flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
3/4 cup canola oil
2 eggs
2 tsp vanilla
1 cup grated carrots
1 cup chopped nuts
3/4 cups flaked coconut
In a large bowl place flour, sugar, baking powder, salt, cinnamon, oil, eggs, and vanilla extract. Beat one minute at low speed, then two minutes at medium. Stir carrots, nuts, and coconut into batter. Pour into greased 9" square pan. Bake 325° F for 40-45 minutes.
