Recipe: Cold Cucumber Soup

- 3 tbsp butter
- 3 cucumbers, diced
- 2 tbsp flour
- 1/2 tsp tarragon
- 1/4 tsp salt
- 1/16 tsp freshly ground pepper
- 4 cubes bouillon in 1 cup hot water (or own stock)
- 1/2 tsp chives
- 1 cup tomato juice
- 1 cup cream
- Saute cucumbers about 8 minutes (don’t let them lose their color).
- Add bouillon and flour gradually.
- Boil and stir constantly 2 minutes.
- Put in blender.
- Add tarragon, salt, pepper, tomato juice, chives, and cream. Chill.
Cold Cucumber Soup is nice to serve on the terrace before calling guests to the table. Makes 6-8 services of Cold Cucumber Soup.
