What is for Dinner Feb 2010

My tummy was turnin' some tonight, so I went without supper- just a couple glasses of 7-Up.

But the night before I had my Dad and his wife over and made T-Bones, baked potatoes, wedge salad w/ bacon, cheese & blue cheese dressing, and cloverleaf rolls. Dad's wife brought a jello cake for dessert.

My wife said I was the only person in the world that fixed wedge salads. First had them in the Army. One of the few foods I actually kept on my menu after playing soldier.

They're yummy aren't they, John? Traditionally they're whole heads of iceberg hollowed-out and packed full of crumbled bleu cheese crumbles, then dressed w/ thick, creamy blue cheese, then they've got crumbled bacon,, tomatoes and whatever other garnishes one likes. I like doing an Alaskan version w/ kippered salmon. In busy, hectic ommercial kitchens they were nice salads for doing ahead and pre-plating for large numbers- especially for busy holidays and banquets.

Yea. The only drawback is that they usually require a thick creamy dressing not vinegar and oil. I do have a "creamy Italian" recipe that is fairly low sodium and taste great that I use on wedges or sometimes just a fast orange marmalade dressing works.

Today I made fried chicken wings I had soaked in buttermilk, hotsauce and other seasoning for 24 hours. I made two chocolate custard pies. One for my hubby to keep and one for Sunday dinner. I put chicken legs and thighs into the same mixture as the wings. I plan to fry them up for Sunday supper with biscuits, herb and garlic roasted potatoes and mac and cheese. Yesterday I made baked tortellini with bread sticks.
Tomorrow we will have leftovers ..chicken wings or tortellini. My sis's hubby is going to be in the area tomorrow so he is stopping by to get her another double batch of fudge. I swear I thought she would have been sick of it after the last batch. She ate it all in two days lol. If I ate that much sugar my jeans wouldnt pull up past my knees.

It all sounds really scrumptious, janie! :)

I'm baking pies Sunday night for my work's "Pi Day" on Monday. Making a couple Butterscotch Meringue Pies and also to shock my co-workers and get them to think outside the box a bit I'm making a free-form mixed berry gallette, and a savory onion and roquefort tart.

For supper last night Mom requested that I make beef stroganoff w/ some leftover roast beef- so I put the beef into a rich gravy and added mushrooms (and the secret Russian ingredient- chopped dill pickles!) then realized I had no egg noodles- nor any pasta whatsever, so we served it over mashed potatoes- and it was quite good that way!

I already roasted a chicken for tomorrow. Will serve with some salad and herb rice.
Today for Sunday supper we had fried chicken, herb roasted yukon golds, deviled eggs, biscuits and salad. I made chocolate custard pie for dessert.
I made homemade hotdog sauce last night for hotdogs later in the week.

Well yesterday my fil called and said he had made cake. I said that is a coincidence since I was bringing you peanut butter oatmeal cookies today and white wine chicken soup lol. So he fed Jon cake and he had cookies. For dinner yesterday I made Ina's chicken parm. Jon even wanted a chicken parm sandwich for breakfast this morning.
Sunday I am making a fried calorie heavy meal. Fried cod, shrimp and oysters. I bought some frozen onion rings I will bake til crispy. I am making hush puppies, spinach greens and potato cakes to go with. The greens and tater cakes were requested by my fil.

Sounds delicious, Janie!

We're all gathering at my sister's Friday night. My niece recently suffered a bad injury at a softball tournament that required surgery. Her whole team and coaching staff are going over to deliver a boat-load of cards, flowers, stuffed animals, and such that they've collected from her school chums, so my sister wants to feed them all. Pizza Hut here locally is still running their any pizza for ten bucks special, so she's loading-up on various pizzas and I'm taking a large tossed salad bowl and brownies, and ten 2-litres of Coke products that Kroger's has on sale 10 for $10...

For tomorrow I roasted a 6 pound chicken so it is ready to eat whenever. I also made a batch of cabbage rolls in the crockpot. I picked up some Romaine lettuce at the store. I have some parm cheese in the fridge that needs to be used up so I though caesar salad would be a nice side for tomorrow. I used some roasted garlic french bread I had made to make croutons for the salad.

I picked up a couple of the lovliest, crustiest petite baguettes last night so I made meatballs and marinara- and built sandwiches for Mom and I under a blanket of bubbly mozzarella. Ended up adding and adding and the result was a huge pot! SO... I'll be cooking vermicilli tonight to use some more of the meatballs before freezing some.

Sunday will be spaghetti and meatballs, garlic bread, roasted asparagus, salad & peanut butter oatmeal cookies.

dunno why??

I like your idea of making "croutons" from Italian bread cubes. I never get to have croutons on my salad (low sodium thingy) so I'll just bet I could cube some Italian or French bread, spray it with olive oil and sprinkle some Italian seasoning on it then toast for some decent "salt free" croutons.

the onion roll gave a good flavor as well - I did them dry because I was making my vinaigrette -

would this help you?

1 cup dried vegetable flakes
4 teaspoons herbes fines
4 teaspoons sweet paprika
4 teaspoons parsley flakes
4 teaspoons ground black pepper
1 tablespoon lemon peel, dried
1 tablespoon citric acid powder
1 teaspoon garlic powder
1/4 teaspoon celery seeds
1 dried tomatoes, cut into slivers -- not in oil! (1 to 2)

Use a coffee or spice mill to grind up everything that is not already ground to a fine grain texture.

Hint: Do the celery seeds with something heavier to get them to pulverize.

Hint: You will get better results if you undergrind, sieve, and regrind the coarsest stuff instead of pulverizing everything into dust in an attempt to get the big chunks out.

This is the general table shake--you can substitute up to 2 tbsp. of your favorite dried herbs for the herbes fines. (e.g. oregano, basil, etc.)

another thing I do is melt butter in a skillet and add a bit of olive oil - season however I want and toss in my bread cubes - stove top toasting

but in the oven you get that nice crunch

of course I "accidentally" make a bit too much vinaigrette - great fo soppin' and dippin'
