C Man, that tomato and horseradish recipe looks great.

Excellent story Mama. And have to take my private jet to the west coast though and sail my private yacht to the island.

To which Island do you refer to IC? Might it be Catalina? A truly splendid Island to visit I must say. The trip there is nice, but especially so if you happen to see some whales en route!!!
 
I like to make a really fresh quick sauce from fresh tomatoes. I skin and dice up about 8 plum tomatoes. Salt well in a bowl for about a half hour, rinse and place the tomatoes in a strainer back over the bowl. let the tomatoes sit for another 15 minutes or so reserving the juice. I then saute a few diced garlic cloves with some hot pepper flakes, add the reserved tomato juice and cook down. Add the diced tomatoes, 1/3 cup of olive oil and heat through. Add a half pound or so of cooked fresh pasta, salt and pepper to taste . I also enjoy adding sliced olives to the tomatoes when heating them through.
 
Cath- I've never been- but I have friends who got married on Catalina Island and it sounds like I missed a truly beautiful scenic and unforgettable event!
 
not only would you NEVER get me in a plane -- you would NEVER get me in a kayak - I'd rather die a horrible death!!!!
 
mama- I never flew until I was 24. My first flight ever was on a wide-bodied DC-9 to Anchorage. After that I flew lots... worked a 4-weeks-on/2-weeks-off rotation shcedule flying in and out of various northern locales, then back to Anchorage- and often times further on back to Illinois and Portland, OR. Every 6 week cycle I was in the air at least twice- usually for lengthy distances, and I did this for almost 10 years. Some of the remote site camps I worked at were small fly-in only locales in the middle of the Interior, on wild rivers, in deep woods. Many times I flew on TINY single-engine beavers and twin-engine otters that only 2-4 passengers could fit in! And some of those flights were CRAZY! Many a time I coulda used you sitting beside me holding my hand- or at least holding my barf-bag! Hee-Hee! :)
