Dinner Tonight: Week of May 5

I like Arkansas, Cathy. It's sort of like Kentucky with worse weather is all.

Of course, Kentucky has no diamond mines. And we don't grow rice here. But otherwise, samee-same in many respects.
 
Yes KYH I am sure that the states are similar, Kentcuky being more temperate in the summer, like Rome! I actually dug around in the mines for a sparkling one NO LUCK!!! But the Quartz Crystals were most abundant and beautiful:) I really loved Arkansas although it was a very warm place.

We had shoulder lamb chops that I coated with garlic/rosemary butter, along with some brown rice and standard out of the cupboard peas. :)
 
That sounds great, Jafo.

Ya know, as a kid I hated lamb. But the past few years I can't get enouggh of it.

That figures, right. When it was common and affordible I wouldn't eat it. Now that it takes a second mortgage......
 
Yeah Lamb is soooo tasty! I have not planned my dinner as yet, but let me brag on my breakfast this morning................Short story;

I had to thin my turnip greens and space them out. Well when I was all done there were still several plants left-over and I hated them to go to waste or the compost pile so a light-bulb went off..bingo...make a tasty omelette and I sauted a little onion in EVOO then added my baby greens,some fresh cilantro, dill, and basil from my herb garden. Poured beaten egg over this then sliced a rome tomato and arranged the slices on top of egg added my fresh ground salt & pepper covered with a lid a few sec.'s the topped with shredded jack cheese and sprinkeled on a little Cavender's Greek Seasoning and finished cooking til egg set and cheese melted. OMG it was delicious, went outside and ate in the screened porch gazebo out back, what a way to start the day!

For tonight:

Tortilla Espanola (starter)

Goan Style Shrimp Curry
Rice
Jicama Slaw
 
Tonight Japanese Mum's Chicken

In case anyone is curious here is the recipe.
8 chicken drumsticks, skin on (the skin is important for flavour, and is so tasty to eat!)
1 cup water
1/2 cup balsamic vinegar
1/3 cup soy sauce
2 1/2 tablespoons sugar
1 garlic clove, peeled and bruised
1 small hot chili pepper, slit open, seeds removed

Place all the ingredients in a saucepan over a high heat.
Bring to the boil, then reduce to a simmer for about 20 minutes.
Remove any scum that rises to the surface.
Increase the heat, turning the drumsticks frequently in the sauce, and cook until the liquid has reduced to a sticky glaze.
Arrange the chicken on a serving platter, remove the garlic clove and chili from the liquid, and spoon the glaze over.
 
I didn't reply yesterday cause my husband took me to the Mandarin House for dinner. lol so I didn't actually cook anything at all. Usually once a week we have "Mom's Night Off" and David brings something home or we go out. Because Mother's Day is coming up we went ahead and splurged for good Chinese. :)

I'm not sure what's doing tonight. We're going to my sister's after D gets home from work. We did have gnocchi and marinara sauce for lunch though (Thanks Uggie! :D)
 
Well, Cole, if you're going to Sis' we know what you're having: Japanese Mum's Chicken.

That weren't so hard to figure out. :p
 
See they loved Mama's marinara and gnocchi as much as we did.
They went out to eat. All I fed them when they got here was cherry cheesecake, chocolate chip cookies and oreo cookie ice cream cones. Gotta get that sugar buzz going before they go home lol.

We have been busy the last couple of days so it has been sandwiches.
I made bacon cheeseburgers once and grilled chicken filet sandwiches.
 
Last night was

Marinated mushrooms (starter)

Braised pork in coriander
Bulgar
Jicama slaw (leftover)

Tonight was down and dirty:

Brats cooked in beer.
Stuffed baked potatoes
Beans
