baked potatoes are probably my favorite. They're just so darn versitile and you can top them with ANYTHING :)

I have 10 lbs of potatoes that I need to use up soon. I'm glad I remembered this thread...now I have lots of ideas :)

Potato Soup

1 Tbsp flour
3 potatoes
4 cups milk
1 onion
2 stalks celery
1 tsp salt
1/4 tsp pepper
2 Tbsp butter
Carrots and Bacon pieces (optional)

Cook potatoes and onions in salted water, until they are soft mashed. Scald milk with the celery, remove celery and add the butter and flour which is creamed together. Then add the prepared potatoes to the milk and season with salt and pepper. Bring to a boil and serve at once.

Potato, Ham and Corn Chowder

3 lbs of potatoes cubed into bite size pieces
1 lb of cooked ham diced
1 bunch of scallions including greens sliced
2 carrots shredded
2 stalks of celery chopped
1/2 green pepper chopped
5 chicken bouillon cubes
5 cups of water
1 1/2 tsp of salt
1/2 tsp pepper
1 tbls mrs dashes original seasoning
1 clove of garlic minced
1 cup of frozen corn kernals
1 12 oz can of evaporated milk

Prepare vegetables and place in crockpot. add bouillon cubes water and seasonings. Cover and cook 6 to 8 hours on low. 2 hours before serving add evaporated milk and mash potatoes lightly. Ladle into bowls and serve with warm french bread.

It's so cold that soup sounds good!

I'm definitely going to give that potatoe, ham, and corn chowder a try. It sounds so yummy!! This weather is driving me nuts. It's always nice to have some warm soup on those days. :)

Well I also love potatoes, but I usually prefer them to be fried and with dips of course. But I also love them mixed in my food like in stew or soups they are really great although I don't really like much of the potato salad or the mashed potato I still love them.
