Favorite ways of serving eggs?

Scrambled with hot sauce on top. *drool* I also like a good "over easy" every now and again.

Someone asked about deviled eggs. All you do is hard boil eggs. Slice in half lengthwise. Scoop out yolks. Place yolks in bowl. Mix with minced onion, dill pickle relish, salt, and pepper. Then spoon (or if you want to be fancy, use a pastry bag) the mixture into the eggwhite halves.
 
I like to mix 4 or 5 drops of Tabasco with one egg in a small bowl, scramble it, and the cook it into a little omelet, then serve it on lightly toasted rye bread with a piece of warmed ham lunchmeat, and maybe a slice of cheddar cheese.
 
I noticed no one mentioned soft boiled eggs :) I guess maybe it's more of an Asian method of eating eggs.

I like my soft boiled eggs runny and smooth, with a few drops of dark soy sauce and a dash of white pepper.

I used to love to eat soft boiled eggs, but isn't there a risk of salmonila nowadays? After hearing all of the news of fully cooking eggs, I haven't had a soft boiled egg in 10 years ...

There is a popular food chain in Singapore (called "Ya-Kun") just selling softboiled eggs with a variety of toasted bread and drinks. They are doing very well.

I did a search on Wikipedia and got some info on salmonella...

"Recent evidence suggests the problem is not as prevalent as once thought. A study by the U.S. Department of Agriculture earlier this year (Risk Analysis April 2002 22(2):203-18) showed that of the 69 billion eggs produced annually, only 2.3 million of them are contaminated with salmonella - equivalent to just one in every 30,000 eggs."

I guess if you buy eggs from large supermarkets and not some dodgey small farm, it should be ok.

That's interesting about the soft boiled eggs. I too had heard on the news that you should cook eggs through. I even tossed out my soft boiled egg holder. The darn news organizations seem to only report bad news. Thanks for clearing this up so I can eat hard boiled eggs again!

So with that in mind I love this mix of soft boiled eggs and toast:
  1. I toast 2 to 3 pieces of whole wheat bread, butter it and then cut into cubes about five by five for each slice of bread.
  2. Soft boil two eggs, cool the shell quickly, then peel the sheel from the egg and place in a small bowl.
  3. Chop of the two eggs in the bowl. Then take two-thirds of the bread, and put it in a large bowl, pour the soft boiled eggs over the bread, and stir. If you feel the bread is too damp, add some more bread cubes.
  4. Add pepper (and salt), if desired.
 
old bay - that sounds good! I love my soft-boiled eggs (3 1/2 minutes for large and they turn out perfect for me! I don't like them too runny) and I am a "dipper" - I love to dip my toast in the eggs. Once they hit the 3 1/2 minute mark I immediately run them under cold water and while burning my fingers, I am cracking the shells and scooping the eggs into a bowl so I can dip my toast. I prefer a good seeded rye with soft-boiled eggs. I like wheat bread for egg salad. Ok - so I am weird!!! And yes - I do love ketchup on my scrambled eggs and omelets! (for those I like white or unseeded soft rye toasted - told you I was weird!)

I got sick about 2 years ago with <a href="http://www.cdc.gov/ncidod/dbmd/diseaseinfo/campylobacter_g.htm">Campylobacter</a> food poisoning. It was the worst 7 days of my life that I can remember so I've become the food safety person! Wash, Wash, Wash your hands after touching uncooked chicken. I got sick eating at a place recommended by a friend. It was new, and the guy went from preping food to making my sandwich without washing his hands. That was Thursday noon. Sunday 2 am was not a good sight! Nor Monday - Saturday. Wash your hands. Then wash them again!

I got sick about 2 years ago with Campylobacter food poisoning. It was the worst 7 days of my life that I can remember so I've become the food safety person! Wash, Wash, Wash your hands after touching uncooked chicken. I got sick eating at a place recommended by a friend. It was new, and the guy went from preping food to making my sandwich without washing his hands. That was Thursday noon. Sunday 2 am was not a good sight! Nor Monday - Saturday. Wash your hands. Then wash them again!
 
I like to scramble an egg and add canned mushrooms, cheddar cheese, either chopped ham or crumbled bacon. While the eggs are cooking warm a flour or corn tortilla and then put the scrambled eggs on the tortilla. It makes a wonderful breakfast tortilla.

I also love to make and eat deviled eggs.

When I was growing up my Mom would make egg salad sandwiches which were delicious. I have not had an egg salad sandwich in a very long time. Just talking about it has given me a craven for one....maybe this coming weekend.

LOL! I guess I'm different. I would rather buy my eggs from a small farm where I know they are fresh, vs. a supermarket where you have no idea.

Maybe it's because I saw this episode of 20/20 years ago...they did an expose' on eggs and how some folks were rewashing and repackaging eggs instead of tossing them on their "sell by" date. :eek:
 
Because I'm trying to limit my fat inake, I always prefer poached but when I feel creative and when my stomach is demanding something different, I always do omelets. I especially love crab omelets.
 
I make eggs, hash browns, and either sausage, bacon or ham or maybe all of them. I layer them all together and either have salsa over them or country gravy. I say it on Food Network at a Diner that All roker was visiting one time.
 
Maple syrup eggs???? I usually like mine scrambled or frenchtoast =p
 
lately I've gotten in the habit of scrambling an egg with some milk in a small pyrex bowl (sprayed with pam) and then microwaved for a minute. It slides out and is the perfect size to layer on a bagel with a slice of cheese.
 
I really like omelets, but over medium eggs with toast definitely is mine and my family's favorite way to eat them.
 
Anyone ever have a fried egg on toast with peanut butter? Add some maple syrup to the peanut butter for more taste. It's really good. Sounds ugly but is a treat.

Now as for regular meals, I do scrambled eggs with mushrooms cooking with some garlic and some white Cheddar cheese mixed it. And perhaps a little chopped up DAK like luncheon ham added after the eggs set.
 
For eggs, I love them scrambled or in an omelet way. And another is soft boiled, I really love eating soft boiled egg, I love it when it is served with soup especially the chicken soup.
