Grilled Sesame Chicken

This is an easy chicken recipe that tastes great.

1 tablespoon brown sugar
3 tablespoons reduced-sodium soy sauce
2 tablespoon sesame seeds
2 cloves chopped garlic
1/8 teaspoon black pepper
Chicken pieces your choice (breast, legs, thigh)

Directions

1. Combine all ingredients except chicken in a shallow dish. Mix well.

2. Add chicken, turning to coat. Cover and marinate in the refrigerator at least 30 minutes. Remove chicken from marinate.

3. Grill until juices run clear when pierced.

Serve with mashed sweet potatoes.

Time: 45 minutes

4 Whole Boneless Chicken Breasts, (skin removed too)


Marinade and Basting Sauce
3 T. low-sodium soy sauce
1/2 C. Pineapple juice
1 T. Grated/chopped fresh ginger or 1/2 t. ground ginger
1/4 C. Sesame seeds
1 T. Sesame oil
1 Clove garlic/chopped fine ( I use more garlic, about 3 to 4)

Combine above ingredients and marinate chicken in sauce in fridge for 3 hours.
**SAVE** marinade and simmer in small pan for about 5 minutes for use as basting sauce.

Grill chicken, basting often. Approximately 8 minutes on each side and (depending on thickness of breasts)

Toast sesame seeds on foil pan on grill-stirring often for even browning.

Sprinkle toasted sesame seeds over chicken on plate with grilled fresh veggies.

(Jasmine rice is also awesome with the grilled chicken.)
