I love to eat but I also am all for healthy cooking. I like my weeds too. This year I've been pulling out the purslane that grows wild in my garden to throw into salads or cook up like spinach. They are lemony and delicious plus they are so good for you.
I don't have a night set up for things but I do make up my menu plans for each day of the week so I can get every thing I will need at the grocery store and not have to make extra trips. I always make sure each meal is packed with mostly fruits & veggies. I try one night a week to have a full vegetarian menu. I usually do 2-3 nights a week of fish and the rest will be some combination of chicken, pork loin or venison. I only do beef a couple times a month. This has kept us happy, healthy and skinny on 3 good sized meals a day. You can eat a lot more when you bulk up with fruits, veg and whole grains.
Tonight we are having roasted duck legs with chipotle-cranberry ketchup (homemade), mustard seed millet pilaf and honey glazed carrots. Dessert is a favorite too, orange supremes topped with greek yogurt, crystalized ginger and a drizzle of galliano.
