My grill is cold on the 4th!

I was looking forward to cranking up the grill and doing burgers for the 4th of July but the family wanted to go out to eat. Soooo $100 later as I was talking to the manager of the local steak house as he said this has been the most customers he has ever seen on the 4th which is usually a slow holiday for them. I quess everyone (my family included) is not sticking with tradition. Very sad indeed.
 
you can fire up the grill anytime!!!! it's nice to go out to eat - but it's nice to stay home and enjoy a nice barbecue - my preference - home with the barbecue
 
Wife had already bought the ground meat for the burgers so she browned it last night, forgot to put it up and left it on the cabinet overnight. This has been one of the more expensive 4th of July's I've had. Oh well.
 
We didnt do anything for the 4th. It was on Sunday so I made SS as usual. Braised shortribs over butter noodles, roasted potatoes, salad, grilled zucchini and rice krispie treats for dessert.
Normally my father in law has everyone together for the 4th but this year he skipped it. It was just so hot. 97 on the 4th and 104 here today. We are supposed to have even hotter temps tomorrow and Wed.
 
I can't take this heat - it is absolutely unbearable - no breeze - and we are still choking down the smell and tastes of the fireworks............

the trick to BBQing in the heat...bbq early, usually if im cooking for a large group, my fire is started at 6 am. the goodies are comming off the pit by 10:30 and Im in the shower by 11 and were munching by 12...in the AC
 
If the heat is too much then you can always BBQ the food for a short time, say 10 mins which will give it it's flavour then take it off and finish the cooking in the oven.

OVEN?? helllllloooooo - in this extreme heat and humidity? I'm not suicidal!

Now some how thats just wrong. You can't Bar-B-Que in ten minutes, or in the oven. Why not just use liquid smoke and call it a smoke flavored roast. CF:D
 
When the temp is too hot I just use my toaster oven on the patio. I do a whole chicken at 275 - 300 degrees for 3 hours. With my basting solution it taste just like rotisserie. Just don't try to bake bread or cornbread in one of those things. That top element will burn the top in 5 minutes.
