On Cooking Your Goose...

My only experience with that bird is my Dad used to make "Duck and rice" but he always used Brandt, which is a goose that strayed into the pattern of his old 16 gauge fairly often down in south Texas. However duck and rice has no more resemblance to a bird then chicken and rice does. It just simmers up in a big ole pot looking a lot like chicken soup. Wasn't bad at all though.
 
Thanks Kevin, great article and the recipe linked at the end sounds wonderful!!!! I have several ways of doing geese or ducks but they all seem to involve sweet, this is different.
