Pumpkin Cheesecake Fudge?

Jon's friend who is sick with cancer really wants a recipe for pumpkin cheesecake fudge. I did a search but came up empty. Does anyone have a recipe for it?

Found this recipe for Pumpkin Fudge in Southern Lady. Is it like the one you tried?

Pumpkin Fudge
Makes about 3 pounds

3 cups sugar
3/4 cup butter
2/3 cup evaporated milk
1/2 cup canned pumpkin
2 tablespoons corn syrup
1-1/2 teaspoons pumpkin pie spice
1/4 teaspoon cinnamon
1 (11-ounce) package white chocolate morsels
1 (7-ounce) jar marshmallow crème
1-1/2 teaspoons vanilla extract
1-1/2 cups walnuts, toasted

1. Line a 13x9x2-inch pan with aluminum foil; set aside.

2. In a Dutch oven, combine sugar, butter, milk, pumpkin, corn syrup, pumpkin pie spice, and cinnamon over medium-high heat. Bring mixture to a boil, stirring constantly, until a candy thermometer registers 234°.

3. Remove from heat; stir in white chocolate until melted. Stir in remaining ingredients until smooth. Quickly pour into prepared pan. Let cool for 2 hours. Cut into small squares to serve.

The Cheesecake Factory Pumpkin Cheesecake

Ingredients

* 1 1/2 cups graham cracker crumbs
* 5 tablespoons butter, melted
* 1 cup sugar, plus
* 1 tablespoon sugar
* 3 (8 ounce) packages cream cheese
* 1 teaspoon vanilla
* 1 cup canned pumpkin
* 3 eggs
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg
* 1/4 teaspoon allspice
* whipped cream

Directions

1. Preheat oven to 350 degrees F.
2. Make the crust by combining the graham cracker crumbs with the melted butter and 1 T sugar in a medium bowl.
3. Stir well enough to coat all of the crumbs with the butter, but not so much as to turn the mixture into paste.
4. Keep it crumbly.
5. Put foil partway up the outside part of an 8-inch springform pan.
6. Press the crumbs onto the bottom and about two-thirds of the way up the sides of the springform pan.
7. You don't want the crust to form all of the way up the back of each slice of cheesecake.
8. Bake the crust for 5 minutes, then set aside until you are ready to fill it.
9. In a large mixing bowl combine the cream cheese, 1 C sugar, and vanilla.
10. Mix with an electric mixer until smooth.
11. Add the pumpkin, eggs, cinnamon, nutmeg and allspice and continue beating until smooth and creamy.
12. Pour the filling into the pan.
13. Bake for 60-70 minutes.
14. The top will turn a bit darker at this point.
15. Remove from the oven and allow the cheesecake to cool.
16. When the cheesecake has come to room temperature, put it into the refrigerator.
17. When the cheesecake has chilled, remove the pan sides and cut the cake into 8 equal pieces.
18. Serve with a generous portion of whipped cream on top.

Spicy Pumpkin Fudge

DIRECTIONS

1. Butter a 9x13 inch pan and set aside.
2. Preheat oven to 300 degrees F (150 degrees C). Arrange almonds on a cookie sheet and place in oven to toast. Stir frequently. Do not burn. Remove from oven and set aside.
3. In a heavy saucepan, combine sugar, butter, milk, pumpkin, and spice; bring to a boil, stirring constantly. Continue boiling over medium heat until mixture reaches 234 degrees F (118 degrees C) on a candy thermometer, about 10 minutes.
4. Remove from heat. Stir in butterscotch chips. When chips are melted, add marshmallow cream, nuts, and vanilla. Mix until well blended.
5. Immediately pour butterscotch mixture into prepared pan. Spread evenly. Cool at room temperature. Cut into squares, and store in the refrigerator in an air-tight container.

A recipe for Cheesecake Fudge

Ingredients

* 1/4 cup butter
* 2 1/2 cups sugar
* 1 (5 ounce) can evaporated milk
* 3 cups miniature marshmallows
* 2 (3 ounce) packages cream cheese, cubed and softened
* 1 (12 ounce) package white chocolate chips
* 2 teaspoons vanilla extract

Directions

1. Line a 9x9 inch baking dish with lightly buttered waxed paper or aluminum foil. Set aside.

2.Combine butter, sugar, evaporated milk and marshmallows in a heavy 2 1/2 to 3 quart saucepan.

3. Bring to a full rolling boil on medium heat; stirring constantly.

4. Continue boiling 5 1/2 minutes on medium heat or until candy thermometer reaches 234 degrees, stirring constantly to prevent scorching.

5. Remove from heat.

I had printed them the cheesecake fudge recipe you posted and he def wants it but they are asking for a pumpkin cheesecake fudge recipe and I just cannot find one. Lots of pumpkin cheesecake but no pumpkin cheesecake fudge. I think Ill give that cheesecake fudge a try myself. Thank you for the help.
 
I'm trying Dianne's Pumpkin Fudge recipe for sure!

This holiday season I want to try many new things.

I make a foo-foo candy/cookie platter each year to give out to all sorts of folks, and in addition to some annual traditional items like pecan diamonds, raspberry-truffle bars, rum balls, stained glass candy, fudge-dipt coconut macaroons, various truffles, cashew/caramel/chocolate bear-claws, etc. this year so far I have a couple new things to try out on it- this fudge will be a delicious addition, I'm sure!
 
I am so determined to find this recipe but.... this one is Pumpkin Bars with Cream Cheese Topping ~ is it close??

Ingredients:
***BARS***
2 cups flour
1 1/2 cup sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
4 eggs, beaten
1 can (16 oz. size) pumpkin puree
1 cup oil (canola or vegetable)
***CREAM CHEESE TOPPING***
3 ounces cream cheese, softened
1/4 cup margarine or butter, softened
1 teaspoon vanilla
2 1/4 cups powdered sugar

Directions:

Heat oven to 350. Combine flour, sugar, baking powder, cinnamon, soda, salt and cloves. Stir in eggs, pumpkin, and oil until thoroughly combined.

Spread batter into an ungreased 15x10" pan. (A 9x13 pan also works; the bars come out a little thicker). Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.

To make the topping, beat together cream cheese, margarine and vanilla until light and fluffy. Gradually add 2 cups powdered sugar, beating well. Add enough remaining sugar until topping reaches a spreadable consistency.

Frost the bars with topping, cover and store in the refrigerator.

This is one hard recipe to find ~ I looked everywhere I can ~ Let's hope someone finds this recipe

He was supposed to stop by and get the recipes today but couldnt make it at the last minute. I woke up this morning feeling bad and it looks like I have strep throat. I hate to see what I could have done to his already compromised immune system. I had some antibiotics in the cabinet I started but I def have strep.
 
jglass sorry to hear about your strep throat ~ you may want to see your doctor and too because the antibiotics you are taking may not be the correct strain to clear your strep throat and that can have an effect on your immune system as well ~ some antibiotics can't help a certain strain and it has either no effect or a compromising effect ~ and when you see your doctor it can have the "correct" antibiotic not work at all. How do I know this~ well I use to do the same and I had the back lash of taking the wrong antibiotics.

Use home remedies for your strep throat until you can see your doctor.

I hope I don't sound like I am preaching or telling you what to do, I just know from my own experience with this and I just want to offer friendly advice.
 
Did you have a prescription for antibiotics that you didn't use completely when you had a different infection? Really everyone needs to take the entire perscription each time you are given antibiotics. If you don't take the whole thing and some of the bug is left in your system it can become immune to the antibiotic. That is how we end up with super bugs that kill lots of people.
 
If Im not doing better in the next couple of days Ill go to our Dr. I dont have insurance and it costs like $75 just to see our family Dr.
 
I can definitely understand and appreciate that ~ since 2005 I have not been insured ~ I wait until the last second too to go to the dr. All my life I have always been insured and I took it for granted but now.... everything comes directly out of my pocket.
 
I know..its rough.
Our Dr wrote both of us Ranitidine scripts several months ago. WalMart has them on their $4 list and Kmart price matches it. At Rite Aid the same script was $57. You can get the same freakin thing at Sams for like $8 for 120 pills. Rite Aid was outrageous.


I very much appreciate you guys concern. I always have to watch anything throat related because I still have my tonsils and they should have been taken out when I was a kid. I catch anything throat realated easy. Dear old Mom and Dad were alcholics and their kids were not a priority.

Again we have very much in common, jglass, my parents were the same exact way. I do NOT drink because of it, never go to bars, clubs or any place where alcohol is the main focus ~ the memories are terrible. My mother never took us to a regular doctor, she would take us to the emergency room and that would be because a teacher (which was most of the time) demanded she do something. The ironic part is: my parents were quite wealthy and we HAD health insurance ~ it's not that she didn't care, it's just that the alcohol took over her common sense and sense of reality. I always get anything ear related ~ why, don't know ~ currently I have had an on-going ears (both ears) infection since April of this year. My doctor is having a hard time trying to get rid of the infections
 
Im so sorry to hear you have been fighting an ear infection. I hope you feel better soon.
My Mom was like two different people. When she drank which was most of the time she didnt care about anything. She loved to fight with anyone who would listen and was a plain old mean drunk. My husband has a friend who is an alcholic and I always tell Jon I dont know how to take him. All I ever knew were mean drunks and where ever this guy drinks he calls to tell you how much he loves you lol. When Mom was sober...which was if one of her brother or sisters were coming to town she acted like she was all prim and proper. It was so pathetic.
My Dad was retired disabled. They got enough money for us to live but it all went for booze. Around here we have boot leggers and my Dad knew them all. When he ran out of $$ they gave him credit so they could stay wasted all month. Both died a young death at 59 from their hard living. He had cancer but an anurism on the wall of his stomach burst and he had a heart attack and killed him at 59 and she got cervical cancer and died at 59. They both smoked those non filtered camel cigarettes and drank like fish.
Everytime my hubby complains about gaining weight because Im always cooking I tell him he is just gonna have to suffer while I get my Betty Crocker on ;) We were lucky if there was anything to eat in our house when we were kids.
I dont think my father in law knows how much I appreciate him. He is a wonderful guy. I always tease him that I finally have a good Dad..even if he cant cook.
