yum, amaretto chunk cookies

I love amaretto. Could I make these without the coconut?

Is that...

1 Tablespoon of Amaretto and 2 t almond extract or one or the other?

I just made these today, they turned out really Good.

You probably could skip the coconut and put in extra nuts maybe even (1 cup walnuts just a suggestion.) I only used 1/2 cup of slivered almonds. I put in extra amaretto I didn't really measure the amaretto lol. Once I put in the flour I folded in more amaretto to soak up the flour. The recipe only called for 1 Tablespoon Yes, it's only 2 teaspoons almond extract.

If you do make these cookies without coconut let me know how it turns out, Good luck, Cookie :)
 
Okay... speaking of romantic meals... one of my fav fun celeb cookbooks is Mo'Nique's "Skinny Cooks Can't Be Trusted!".

It's loaded w/ EZ, down-home dishes (some have given the recipes less than awesome reviews- but I personally like the book for it's hilarious wit & wisdom!) and also candid, unabashed frankness about romance and dating!

Mo'Nique is a plus-sized, lusty, sexy gal who shares a lot in her book about how to get a man! In fact, the first three recipes in her cookbook are called: 1.) "The Man-Catcher" (a fried chicken/peach cobbler spread) 2.) "Breakfast for the Perfect Morning-After" (a table set w/ stacks of blueberry hotcakes, herb-scrambled eggs, salty smoked meats, fresh-squeezed juice, etc...) and 3.) "Breakfast for the CRUMMY Morning-After" (super-lumpy oatmeal to be served when... you-guessed-it! You've invited someone over who turned out to be not quite "all that"! Ha!)
 
I'm sure it's hilarious but I do find the saying "you can't trust a skinny cook" to be a little unfair.
 
We fixed a guys computer this week and turns out he is a foodie like us. Nice guy..he and his girlfriend want us to come over for dinner one day. Jon and I had kind of a early Valentine dinner last night. We splurged and went to our fav Chinese place over in Ashland. We will probably go to some where here in town Sat.
 
Sloppy jo's

I had my SLOPPY JO'S for lunch today. They really did remind me when I was a kid, I just Loved them. It brought back good memories when my Mom had 16 girls over to our house for my 7-Th Birthday Party and she made Sloppy Jo's in a crock pot for the party, then she had a tape recorder and had every girl say there name and when she came to me I said "I'm the Birthday-girl."!! :D You had to be there it was Cute! :eek: Cookie :)
