Banana Bread

2 Points per slice


1/2 cup McNeil Nutritionals Splenda brown sugar blend
1/4 cup light butter
1 2/3 cup banana(s)
1/4 cup fat-free skim milk
1/4 cup fat-free sour cream
2 large egg white(s)
2 cup all-purpose flour
1 tsp baking soda
1/2 tsp table salt
1 Tbsp vanilla extract

Instructions

Preheat oven to 350°.
Combine sugar and butter in a bowl; beat at medium speed of a mixer
until well-blended. Add banana, milk, sour cream,vanilla and egg whites;
beat well, and set aside.

Combine flour, baking soda, and salt; stir well. Add dry ingredients
to creamed mixture, beating until blended.

Spoon batter into 4 (5 x 2 1/2-inch) miniature loaf pans coated with
cooking spray. Bake at 350° for 45 minutes or until a wooden pick
inserted in center comes out clean. Let cool in pans 10 minutes on a
wire rack; remove from pans. Let cool completely on wire racks.

Note: To make one 9-inch loaf, spoon batter into a 9 x 5-inch loaf
pan coated with cooking spray; bake at 350º for 1 hour and 10
minutes. Yield: 1 loaf, 20 servings (serving size: 1 slice
 
Chocolate turtle Cookies

2 points per cookie


1 cup all-purpose flour
1/3 cup unsweetened cocoa
2/3 cup sugar
1/4 cup reduced-calorie margarine
1/4 cup fat-free cream cheese
1 large egg white(s)
2 Tbsp fat-free skim milk
1 tsp vanilla extract
1 sprays cooking spray
24 piece caramel candies
24 pieces pecan halves

Instructions

1. Combine flour and cocoa in a small bowl; set aside. Beat together sugar, margarine, cream cheese, egg white, milk and vanilla extract in a large bowl; add flour mixture and blend well. Chill dough at least 30 minutes, or until firm.

2. Preheat oven to 350°F. Lightly coat 2 baking sheets with cooking spray.

3. Shape dough into 1-inch balls; place on baking sheets about 1 to 2 inches apart. Press a caramel into each cookie and flatten; top each caramel with a pecan half. Bake for 10 minutes. Allow cookies to cool on baking sheets and then remove to a wire rack to cool completely. Yields 1 cookie per serving
 
Snowman Soup

2 Points per 1/2 cup serving


3 cup non-fat instant dry powdered milk
1 cup McNeil Nutritionals SPLENDA No Calorie Sweetener
8 serving Hershey's Cocoa
8 serving SF Chocolate Fudge Puddin
1/2 cup Carnation Coffee-Mate Fat-Free Powder Creamer
24 pieces Hershey's Kisses

Instructions

Mix all ingredients together and store in an airtight container. Put 1/4 cup into a cup of hot water. Put Hershey kisses in and stir. You can add a candy cane into it for an extra point if you want a minty taste to it.
 
I don't know much about the South Beach Diet. I like Weight Watchers cause you are able to eat whatever but with moderation. There are two different programs one is the flex were you have so many points. Then there is the core program. This allows you to eat certain foods that don't cost points. You should check it out. Maybe there are items on core that your husband could eat and still eat alot.

Which program are you on or have you been on & liked?

The main thing with the South Beach Diet is getting rid of carbs for 2 weeks to allow your body to 'detox' from all the bad carbs in foods, which means you get to eat mostly meat & vegetables but nothing with carbs or sugar in them, even natural sugar. Then after the initial 2 weeks, you can start gradually adding in whole grain foods & fruits, but not very quickly... you can only add one item (either carb or natural sugar) per day every week up to 3 carb items & 2 nat. sugar items. For example on week 3, you can add 1 whole wheat bagel per day. Then starting on week 4, you can add a piece of fruit.

That's just a quick summary of it, I know its not the whole concept. I had a website dedicated to the SB diet bookmarked but someone (probably hubby himself) deleted my bookmark.
 
I like the core program. I am not really into breads or even pasta. I do on the other hand love vegetables and fruits. I have noticed that if you eat alot of protein and not alot of sugar that you can also lose weight. I will have to look into the south beach diet as it looks interesting.
 
Chickado 'Wiches (7.7 pts.)

2 slices italian bread (1 ounce each), toasted
1 T Thousand Island salad dressing, divided
2 oz. thinly sliced cooked chicken
2 slices crisp bacon, crumbled
1/4 c. each chopped scallions (green onions) and tomato
1/8 medium avocado (about 1 oz.) pared and thinly sliced
2 oz sliced Swiss cheese

On baking sheet arrange bread slices ina single layer and spread each with 1/2 tsp. dressing.

Top each slice of bread with half of the chicken, bacon, scallions and tomato then top each with 1 t. of the remaining dressing.

Arrange half of the avocado slices and half of hte cheese on each sandwich.

Broil 6 inches from heat source until sandwich is hot and cheese is melted, about 2 minutes.

Makes 2 servings
 
5 Points - El Pollo Loco Flame-broiled Chicken

1/2 roasting chicken, cut into pieces

MARINADE
4 cups water
2 tablespoons salt
1/2 teaspoon pepper
2 teaspoons lemon juice
1/2 cup orange juice
1 large garlic clove, minced
1/4 teaspoon yellow food coloring



Combine the marinade ingredients in a large bowl.
Add the chicken to the marinade, cover, and refridgerate for 1 hour.
Preheat grill to med/high heat. Cook the chicken on the grill, leaving the cover of the grill open. When the chicken has cooked for about 25 min, marinade the chicken once again for about 5 minute Place the chicken back on the grill and continue to cook for another 20-25 min or until done.
Before serving the chicken, remove the skin, and serve with steamed flour or corn tortillas (low fat or fat-free) and with salsa.

Wellm surely this meal will be great for me, thanks for sharing this! I do love chicken so much, that if I can only have one meal in the world for all of my life I will choose to have it than anything else!
