What do you have/make for snacks

I like to go w/ the traditional chips & dip. I realy like chips and salsa (home made salsa when I can) ...

Ps. I love the UFC too!

Hey do you have a great homemade salsa recipe? I would love to learn to make it myself since we go through so much of it!
 
Chili's Salsa Recipe


14 1/2 ounces can tomatoes and green Chills (like Ro-Tel)
14 1/2 ounces canw hole peeled tomatoes plus the juice
1 tablespoon jalapenos (canned, diced, not pickled) PLUS
1 teaspoon jalapenos (canned, diced, not pickled)
1/4 cup diced onion
3/4 teaspoon garlic salt, to taste
1/2 teaspoon cumin, or more to taste
1/4 teaspoon sugar, to taste

Place jalapenos and onions in processor; process for just a few seconds. Add both cans of tomatoes, salt, sugar and cumin. Process all ingredients until well blended, but do not puree.

Place in covered container and chill. A couple of hours of chilling w ill help the flavors to develop.

Serve with your favorite thin corn tortilla chips.


EASY SALSA


1 medium tomato, seeded, chopped
1 tbsp. red onion, diced
1½ tsp. jalapeno peppers, seeded, minced
2 tbsp. balsamic vinegar
¼ cup fresh basil, finely chopped
1½ tsp. olive oil
Salt and fresh ground pepper, to taste

Combine all ingredients in a small bowl, cover and refrigerate for 12 to 24 hours. (Makes about 1½ cups salsa.)



Fresh Tomato Salsa


1 -1/2 pounds ripe tomatoes ; seeded, chopped
1 medium purple onion ; chopped
1 large clove garlic ; chopped
3 scallions or green onions ; chopped
1 to 2 large fresh jalapeño pepper ; seeded, chopped
1/4 cup fresh cilantro leaves ; chopped
1 to 3 small cans of green chiles ; depending upon taste
1 tablespoon olive oil
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon ground cumin
1 teaspoon red wine vinegar
2 tablespoons tomato juice


Combine onion, garlic, jalapeño and cilantro in blender or food processor. Pulse until finely chopped, but not puréed.
Add tomatoes, canned chiles, oil, lime juice, salt, cumin, vinegar and tomato juice. Pulse until just chopped -- not too smooth.
Correct seasonings, if necessary. Cover and refrigerate for about an hour before serving. Makes about 4 cups.



Red Tomato Salsa Recipe


2 Tablespoons vegetable oil
1 Medium onion -- thinly sliced
4 Cups diced canned tomatoes
1 Cup tomato juice
2 garlic cloves -- peeled
1 large jalapeno chile, stemmed, seeded (optional)


Heat the vegetable oil in a medium skillet over moderate heat. Cook
the onion until soft, about 10 minutes. Pour other ingredients into a
sauce pan and add the salt. Bring to a boil, reduce to a simmer and
cook, uncovered, 20 minutes. Taste and adjust seasoning. Store in the
refrigerator 23 days or in the freezer for weeks.

Wow you have recipes for everything!! Do you have a salsa one that is kinda sweet? My 10 year old doesnt like the hot like the rest of us
 
lately I've been on a kick - either it's popcorn or it's a selection of pickles and olives and eggs

If it's not a big bowl of popcorn with butter (made on the stove top) then it's a bowl loaded with dill and sweet pickles and stuffed olives; I keep hard-cooked eggs in the fridge (not that they last very long) and for a munchie I will take one out, peel and make a deviled egg with mayo and minced sweet pickle in it

(I'm too old to be pregnant!) LOL
 
Any of the recipes I posted above can be made by leaving the hot pepper out. You can always remove some salsa from the bowl before you add the hot stuff - there are times I leave out the hot stuff completely!

SWEET AND SOUR GREEN TOMATO SALSA


1 red bell pepper
2 1/2 c. chopped green tomato
1 T. balsamic vinegar
1 t. brown sugar ; packed
1/2 t. salt
1/3 c. finely chopped sweet onion
1 garlic clove ; minced


Preheat broiler. Cut the bell pepper in half lengthwise, discarding seeds and membranes. Place pepper halves, skin sides up, on foil-lined baking sheet; flatten with hand. Broil for 10 minutes or until blackened. Place in a zip-top plastic bag; seal. Let stand 10 minutes. Peel and finely chop. Place chopped green tomato, vinegar, sugar, and salt in a blender or food processor, and process until smooth. Place tomato mixture in small saucepan; cook over medium-high heat 5 minutes or until liquid almost evaporates. Place in a small bowl; cool to room temperature. Add roasted pepper, onion, and garlic to tomato mixture; toss well.



Simple Texas Salsa


3 tablespoons chopped fresh chives
1/2 bunch fresh cilantro
2 cloves garlic ; chopped
2 (14 ounce) cans stewed tomatoes
2 serrano chilis ; seeded and chopped
salt ; and pepper to taste


Combine chives, cilantro, garlic, tomatoes, peppers, salt and pepper to taste in an electric blender. Pulse until the salsa is to your desired consistency.
 
Chili Cheese Dip

2 - 8 Oz Pkgs Cream Cheese, Softened
1 - 15 Oz Can Chili Without Beans
16 Oz Shredded Cheddar Cheese
1 ? 13½ Oz Pkg Nacho-flavor Tortilla Chips


Spread Cream Cheese On The Bottom Of A Microwave-safe Dish. Spread A Layer Of Chili Over The Cream Cheese. Finish With A Layer Of Shredded Cheddar Cheese.

Microwave For 5 Minutes Or Until The Cheese Melts.

Serve With Spicy Nacho Tortilla Chips.

You can use leftover chili or hotdog chili for this as well.

a not so hot salsa - -

tomatillo salsa

1 lb (or so) fresh tomatillos
1 medium tomato (seeded)
1 jalapeno (seeded to tone down heat)
1/4 - 1/2 meduim onion

toss in food processor and pulse until desired consistency.
 
When I which ufc I usually make some guacamole and get's some chips and salsa. Not only that I get some cheese and crackers other, but I usually get some pizza to go along with it.
 
I make everything unhealthy for snack late evenings or late nights doesn't matter :)
My favorites are french fries, popcorn, garlic bread, mozarella sticks, fish sticks
and butter mushrooms.
 
I alway like to go with the latter night snack of burchetta (cold style)
just chop up tomatoes, mozerella cheese, and basil, salt, oil.
It can go on crackers , bread. simple to make oh so great and the late night guest thinks its fancy and you slaved hard on it.
 
Our family's favorite healthy snack seems to be roasted corn on the cob with a squeeze of lemon and a rub of salt. It tastes heavenly. We are corn lovers, so we make quite a few other corn snacks as well.
 
foodlover - I'd be curious to know what other kind of corn snacks you make. :)
 
Lately I'm on a 'Mediterranean" kick - imported Italian cheeses and olives for lunch time snacks when I am not having lunch - popcorn for a good movie and bread and butter pickle sandwiches with a side of bread and butter pickles when I don't know what I want to eat!
 
^That sounds good. Maybe I will be able to give something similar a try one of these days.
 
Lately we have been making popcorn and dressing it up with butter, parmesean cheese, chilli powder, garlic powder and tobasco. My kids love it. If there is no popcorn we will eat fruit and dip it into vanilla yogurt.
 
I usually get some crackers, spread some spread, philadelphia =o and i eat eat eat
 
Sometimes I make pita chips. Cut up pitas, a drizzle of olive oil and some garlic, salt, and oregano, and bake till crispy.
 
If im lazy, i just get a tub of ice cream and just eat my way through it.
 
Yesterday I went to the store and got new flour tortilla chips. They are really good with cheese dip or salsa. This might be my new snack everynight.
