What is for Dinner April 2010

Alrighty- I just got back from the store and my supper tonight is gonna be roasted chicken, carrot-fennel rice pilaf, and crunchy broccoli salad w/ raisins, bacon and walnuts. I love that salad tossed w/ a sweet/creamy mayo-based dressing... kind of a jazzed-up twisted version of cole slaw.

mmmm - I'll have seconds at your place! I made breaded chicken breasts, baked potato wedges and baked onions. Nothing fancy. Oven stuff.

I made Smoked Pork Chops; Fried Okra; Butter Peas; Baked Sweet Potatoes; Biscuits. I only left the biscuit off my plate, but my goodness what a meal!!!!
 
Hi, It's been some time I came to S.P. Hope every-one is doing OK. I went on Vacation to Florida for a couple of weeks. I didn't cook at all, now that I'm home I have been cooking again. I'm making big salads a couple times a week with fish. I have been dieting trying to eat lighter and not eating anything after 7:30 - 8:00. The weather starting to warm up and I will be doing more with fresh veggies. I want to start using my blender more often this summer for smoothies and sauces. I have been watching cooking shows they are alway using blenders- food processors etc, it's fun to watch. Take Care, Cookie :)
 
Wednesday night I ran tons of errands and was really pressed for time- so I ate one of my FAV fast and easy meals- cheese & crackers! Wednesday was a "Food Day" at work and I had taken a tray of cheeses, fruit and crackers, so when I got home Wednesday night I simply ate the remaining leftovers- a few hunks of brie, cheddar and havarti-dill w/ a hand-full of Triscuits and a cluster of grapes- YUM!
 
Tonight's Dinner: Turkish Lentil Recipe

Ingredients
*1 C. Dry Green Lentils
*1/2 lb. Ground Beef
*1 Small Onion, Diced
*1 T. Butter
*2 T. Tomato Paste
*1 1/2 C. Water
*Salt and Pepper to taste
*Crusty Bread for dipping (Optional)

Preparation
*Soak the dry green lentils for at least 30 minutes. Drain.
*In a dutch oven, add 1 T. butter.
*Once the butter melts, add the diced onions. Cook until translucent.
*Add the ground beef, cook until browned.
*Add 2 T. of tomato paste, mix with the ground beef mixture.
*Season with Salt and Pepper.
*Add the green lentils.
*Add the water; please note that the consistency should be like a stew rather than a soup. Monitor the water level during cooking. If you notice that it is turning out to be like a paste, then add more water.
*Cook until lentils are soft, about 35-40 minutes.

*To serve: Eat as a stew with crusty bread, or put the lentils on top of Turkish rice with fideos.
 
Gee sevgi I have a recipe very simular to this. It was an attempt to make a meal out of lentil soup. Started out as lentil soup made with 1 cup (8 oz) of dried lentils and it have 2 chopped roma tomatoes. I added a premade hamburger patty (about 5 oz) out of the freezer, crumbled and browned.

I LOVE brie! My friend has a recipe where you take a wheel of brie, place it is phillo dough and put about 1/2 cup raspberry preserves on top. Fold the phillo dough up and over, brush with butter and drizzle with maple syrup. You bake it for about 30 minutes (I think that's how long)...and oh my my my...it is SO yummy spread on table crackers.

It does sound similiar! It's a great dish.
 
I use this recipe for my bread machine. Everyone here loves them.

Bread Sticks - Pizza Hut Style

1 1/3 cups warm water
3 tablespoons olive oil
4 cups flour
1 teaspoon salt
2 teaspoons oregano
3 tablespoons powdered milk
2 teaspoons yeast

Topping
2 tablespoons dry parmesan cheese
1 tablespoon garlic powder
1 tablespoon garlic salt
1 tablespoon onion powder
1 tablespoon oregano
1/4 cup olive oil

Add the dough ingredients to the bread machine in the order given, and set to first rise.
When this has finished, roll the dough out into a rectangle which is 1/2-3/4 inch thick.
With a pizza cutter, cut the dough into 1x4 inch strips.
Place on greased cookie sheets and allow the bread sticks to rise until doubled.
Meanwhile, stir the topping seasonings together with the parmesan cheese.
Brush the breadsticks heavily with olive oil.
Sprinkle with the topping. I use an empty spice bottle to shake it on evenly.
Bake the bread sticks at 350 for 12 to 15 min's until golden.

It's a cool, rainy weekend here so I've got some barley simmering in chicken stock right now and some pulled chix meat and veggies waiting to go in soon. Chicken-Barley Stew night here at my place! And the rest of a tub of butter-pecan... Yahoo! :)
