What is your definition of COMFORT FOOD?

Comfort Food = Round steak and gravy. Just flour it, brown it some, add as much water as you want gravy plus a lot of onion, cover and simmer an hour or so.
 
My comfort food was a salad my mother made every Sunday with finely chopped cabbage, grated carrots, grated american cheese, and a tablespoon of olive oil, this you must add salt to taste, mix thoroughly and can be served on a bed of lettuce, with fresh baked scones, or with your dinner. I have tried on any occasions to make this dish, unfortunately not as good as my mom's.

I know exactly what you mean ScubaL!!! My Mom made the world's VERY VERY VERY best Ghoulash and I tried a million times to make it and no dice it has never ever turned out like hers, she made the best! No cheap fillers in hers either, just pure Ghoulash there was never noodles or rice or any such thing, it was just delicious!!!

What amazes me though is that I watch her prepare dishes step by step so that I can make her dishes just like she does, and for the life of me there is some secret something extra special love or something that I miss that she puts in that gives her dishes that extra special taste. She is just good that's all.

Yup - swiss steak - my kids would devour it and sop up the leftover juice with white bread. I should fix it again next time they are home.

This is an old one from my file:

Persimmon Pudding

1 egg
1 cup persimmon pulp
1/2 cup sweetened condensed milk
1 tsp vanilla extract
1 Tbs melted butter
1 cup granulated sugar
1 cup all-purpose flour
2 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon

1. Preheat the oven to 300 degrees F (150 degrees C). Butter a 1 1/2 quart casserole dish.

2. In a large bowl, whisk together the egg, persimmon pulp, sweetened condensed milk, vanilla and melted butter. Combine the sugar, flour, baking soda, salt and cinnamon; whisk into the persimmon batter until well blended. Pour into the prepared baking dish.

3. Bake for 1 hour in the preheated oven, or until the pudding is set and the top is lightly browned.

Servings: 4

Prep Time:: 10 minutes

Chili mac recipe:

1 pound ground beef
1 can kidney beans
1 can rotel diced tomatoes
1 diced green pepper
1 small onion choped
1/2 pkg.chili seasoning mix with 1/4 cup water
1/4 tsp ground cumin 1/4 tsp hot pepper flakes
dash salt/pepper
1 cup elbow macaroni, cooked
grated hot pepper cheese on top. Enjoy!

Back in the 50's & 60's that's what my mom called goulas, except she didn't put kidney beans that I remember. I'd eat a half of loaf of bread and butter with it - make goulas sandwiches. We never had hot stuff, either - it was strictly McCormick's Chili Powder.
