What is your favorite Christmas salad?

This thread started for Christmas 2008. Well I'm going to add (for Christmas 2009) jfain's "Moorish Crunch Salad" but with one Red Delicious and one Granny Smith apple just to add more color to it. -John-

For New Years though it will be Cathy's first salad "Mandarin/Pineapple" however Cathy I don't have a recipe - hint -

Nice & Easy and oh so good John.

Here you go:

2 small cans of Mandarin Oranges (drained)
1 large can Pineapple Chunks (drained)
1 16 oz. container Sour Cream
1 cup miniature Marshmallows
Optional: Shredded Coconut 1/4 cup
1/4 cup Chopped Pecans

Night before big Holiday feast mix all ingredients together and let marinade overnight serve the next day.

So good!!!

Thats the recipe I like. Just open cans and throw it together. I can't do that with too many veggys but fruit is usually lower in sodium. Thanks

You're more than welcome! I had it at my Aunt's house one Thanksgiving and was blown away with how good it was, my jaw dropped when she gave me the recipe and I found out how easy it was!:)

I still gotta find the correct combo for the copyright symbol! I will let you know if I hit upon it! Although I did find it on my computers Character Map, now I have to learn how to use it!

It will work my dear friend, you just need a little curry taste, now curry is an extremely strong seasoning, please try and not use too much, did I mention to dissolve the curry in water before placing it in the hot oil with the roasted garlic and your choice of seasonings? Because the curried smell can linger on just about everything in your home, this little trick can help mix cinnamon powder in approx. 2 cups of water place on stove to boil, remove after boiling and walk through your house, the vapor when distributed makes your home smell like fresh cinnamon buns, if you do not like cinnamon, then place a slice of bread on your stove grill fire until a little blackened turn the fire off but leave the toasted bread on the stove and the toasty smoke gives off a smell like toasted bread. I do this a lot especially for fried foods to take away that oily smell.

Artichoke salad

2 can artichokes rinsed, and cut in quarters ( cool in the fridge the night before)
1/4 red onion sliced very thin
juice from 1/2 lemon
2 TBSP chopped fresh parsley
blk pepper
lettuce --2 cups chopped
good extra virgin olive oil ...to coat not drenched)

Place the lettuce on the surving platter .... combine all other ingredients in a large bowl and toss ... arrange it over the lettuce ... sprinkle more parley and arrange some onion to make it look nice on the plate.
